Stone was expensive building material in Medieval times. Rich people used stone as building material. Most of the buildings were made of cheaper and eroding materials such as straw, mud-brick, wood...etc. Today we see mostly stone structures from Medieval times because stone survives the ages.

Instead of less stone how about more wood? Add a few more variants of the wood wall, especially round to match the stone round blocks. This would give us something to recreate waddle and daub round homes which are very common early period structures. Rounded thatch roofs to match.

perhaps different grades of wood and stone?

maybe lower......erm....i don't know if tiers of tools exist but...
maybe lower tiers of tools grant different grades of stone/wood and high tiers give better grades of wood and stone.

It's not the abundance of stone that's the issue. Stone has always been everywhere.
The mining and hauling is too easy. You can carry the material for several stone walls in your pockets.

Until we get actual methods of multiplying our ability to harvest and utilize resources, for god's sake, no.

It takes days to build even a small castle alone.

If anything, there should be the introduction of ways to make wood easier to build with. One thing I have suggested before in the past is some sort of sawmill, which would produce more timbers from a log than standard crafting, but would require a kinetic power input.

I would like to see such infrastructure tools for stone and iron as well, but naturally those would be much more complex and expensive.
